Peanut Butter Pumpkin Spice Granola

The Story
If fall had a flavor, this would be it — crunchy clusters of peanut butter–pumpkin goodness with just the right balance of sweet and salty. This recipe is quick to mix, makes your kitchen smell like pumpkin pie, and fits right into your macros — no “perfect plan” required. Sprinkle it over Greek yogurt, layer into chia pudding, or enjoy by the handful.

Ingredients
- 150 g rolled oats
- 20 g peanut butter protein powder (vanilla or chocolate work too)
- 15 g black chia seeds (or flaxseed)
- 30 g chopped almonds (or nut of choice)
- 60 g pumpkin purée
- 40 g natural peanut butter, melted (or use PBfit to lower fat)
- 30 g honey or maple syrup (or sugar-free syrup)
- 1 tsp vanilla extract
- ½ tsp pumpkin pie spice
- ¼ tsp cinnamon
- Pinch and a half of sea salt

Directions
- Preheat oven to 325°F / 163°C. Line a baking sheet with parchment.
- In a large bowl, mix all dry ingredients: oats, protein powder, chia seeds, almonds, pumpkin pie spice, cinnamon, and salt.
- Add the wet ingredients: pumpkin purée, melted peanut butter, honey/maple syrup, and vanilla. Stir until fully combined. If the mixture looks dry, add a splash of water until it clumps slightly.
- Spread evenly on the lined baking sheet.
- Bake 30–40 minutes, stirring halfway. Edges should be golden.
- Cool completely—it crisps as it cools and the sugars set. Break into clusters and store airtight.
